Dog Energy Bars

Ingredients
1 cup whole wheat flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ginger
3/4 cup shortening
3/4 cup brown sugar or raw sugar
1 teaspoon vanilla
2 eggs
2 cups oatmeal, quick or old fashioned - either will work
1 cup peanuts, chopped

Directions
1. Cream shortening, sugar, and eggs together.
2. Mix dry ingredients and add them to the above mixture.
3. Press 1 large tablespoon into each mini loaf pan or mini muffin cup, and make sure it's evenly distributed in the pan. Or...drop by teaspoon onto a greased cookie sheet.
4. Bake at 350 degrees F for 15-20 minutes. Bake 12-15 minutes for teaspoon size cookies, if you prefer to make smaller cookies.
5. Turn off the oven and let the energy bars continue to dry in the oven overnight.

Energy bars will usually keep well in an airtight container at room temperature. However, it's sometimes hard to tell if they are dry all the way through to the middle. So, I think you would do well to refrigerate them just in case. If they are not thoroughly dried, they will develop mold.
